Use it as a thickener:

It has more thickening power than cornstarch . . .

Mix guar gum in dairy-based dressings for a thicker, more appealing appearance and texture, combining it with your liquid elements first. Use guar gum when creating dry soup mixes. Follow your recipe exactly, and use ¼ tsp. for every quart of liquid used. The guar gum will bind to the water or broth, creating a luxurious and thick texture.

An easy way to calculate the amount of guar gum needed is to add up the amounts of liquid used in the recipe. Convert this total to quarts; 1 quart equals 4 cups, 1 cup equals 16 tbsp. and 1 tbsp. equals 3 tsp. For each quart of liquid in hot recipes, such as gravy, use between 1 and 3 tsp. of guar gum. For cold recipes like salad dressing, use 1 or 2 tsp. per quart.

You can use guar gum as a substitute for xanthan gum, but you must add 50 percent more guar gum than xanthan gum.
